Welcome to Dairy Foods’ inaugural Ingredients Issue. Although we cover ingredients extensively throughout the year, our staff felt it was a great time to devote a significant portion of our magazine to ingredients that are red-hot in the industry.

Sports Nutrition 

There is no doubt that dollar sales of sports nutrition products will grow. According to Euromonitor, sports protein RTD beverages are already a $1.4 billion market in the United States, with the entire sports nutrition market at $14.1 billion in 2022, with an anticipated CAGR of 7.9% between 2022 and 2027, the market research firm adds.

RTD Beverages 

The ready-to-drink (RTD) market is driven by the increasing demand for dairy-based products, rising health consciousness among consumers, and the availability of diverse flavors and varieties. Additionally, the growing popularity of functional dairy drinks, such as probiotic and fortified beverages, is further contributing to market growth, notes Profi Research.

Cultured Dairy

Consumers are looking for functional foods and beverages that do more than fuel the body. Consumers are reading labels and discovering that cheese, yogurt, drinkable yogurt, kefir and other fermented dairy products not only provide satiety but are proven to benefit digestive health. MILK 

According to Mintel, milk production in the United States has nearly doubled in the past five decades, reaching an all-time high of 226.6 billion pounds — 26.4 billion gallons — in 2023. However, milk consumption is dropping, with consumers drinking 47% less milk today than in 1975. Sponsored by Bruker

Ice Cream 

The global ice cream market is expected to reach $91 billion in global retail sales by the end of this year. Volume growth is expected to expand at a compound annual growth rate (CAGR) of 5.7% through 2027, according to Euromonitor. Three-quarters of global consumers are excited about trying new ice cream experiences, research conducted by Barry Callebaut states.

CHEESE 

The $18.5 billion cheese category, which includes shredded, chunks, slices, string/stick, crumbled, cubes and ricotta, experienced a 3% year-over-year (YoY) increase in total U.S. multi-outlets for the 52 weeks ending Jan. 28, according to data from Circana.
