Food Ingredient Solutions says its vegetable juice color 4521 is a new natural yellow made from yellow beets. The primary pigment is vulgaxanthin, a water-soluble yellow also found in smaller quantities in red beets. Yellow beet offers a water-soluble yellow alternative to annatto, beta-carotene emulsions, curcumin emulsions and riboflavin phosphate. Vegetable juice color 4517 is suitable for use in yogurts, flavored milks, ice cream, spreads and other dairy applications.

This clean-label product is the 12th Class I caramel color in the Sethness Roquette portfolio. Manufactured from non-GMO cane sucrose, SB121 is ideal in various dairy applications. It is also much darker than typical Class I offerings, and as a result, it offers an appealing brown hue. All Sethness Roquette Class I, or plain caramel colors, are minimally processed.
