Jerome, Idaho-based Idaho Milk Products is the 2024 Breakthrough Award for Dairy Innovation winner, for the formulation of its IdaPlus 1090, a protein used in ready-to-drink (RTD) beverages.

PACKAGING TECHNOLOGIES
Primary packaging is a key element in the drive by dairy manufacturers to maximize dairy revenues and enhance food safety. But identifying the optimal solutions including material type and container size and design for specific brands can be arduous.

INSIDE THE PLANT
Cincinnati-based Graeter’s Ice Cream has served the Midwest since 1870. Dairy Foods visited the plant in April to check out its 30,000-square-foot manufacturing facility, which opened in 2010.

INGREDIENT TECHNOLOGIES
Today’s dairy cases feature All-American flavors like vanilla along with spicy-sweet flavors like honey and chipotle, fruit flavors and botanical flavors plucked from nature. The global food flavors market is expanding, with a projected worth of $21.3 billion by 2027, notes Chicago-based Datassential.

OUTLOOK REPORT
Protein continues to shine. Among the protein-rich dairy foods consumers are enjoying are cheese, at nearly 23 grams per serving; cottage cheese, at 11.1 grams per serving; and low-fat plain yogurt, 9 grams in a 6-ounce container.

Processor PROFILE
Graeter’s Ice Cream has achieved something few companies have. It is synonymous with the city it has served for the past 154 years: Cincinnati.
